This chicken sausage, pepper, onion, and potato bake recipe is a kids approved comfort food - at least in our household!

2 teaspoons olive oil
1 package of Bast Poultry Farms Italian Chicken Sausage
¼ cup olive oil
4 large potatoes
2 large green bell peppers seeded and cut into wedges
2 large red bell peppers seeded and cut into wedges
3 large onions, cut into wedges
½ of dry white wine
½ a cup of chicken stock
1 tsp of Italian seasoning
salt and pepper to taste
Preheat oven to 400F
Heat 2 teaspoons of olive oil in a large skillet over medium heat and cook the sausage until brown (about 5 to 10 minutes). Transfer cooked sausage to a large baking dish.
Pour ¼ cup olive oil into the skillet and cook potatoes, until brown (about 10 minutes)/ Place potatoes in the baking dish, leaving some oil in the skillet.
Cook the green and red peppers and onions until they are beginning to soften (about 5 minutes).
Pour white wine and chicken stock over the veggies and sausage, sprinkle with Italian seasoning, salt and pepper.
Gently stir together.
Bake in preheated oven until hot and bubbling (20 to 25 minutes).
Serve hot and enjoy.
